I was hanging out with Jen and Rosalyn a little while ago, and for some reason, we were talking about how we all needed more Iron in our diet. When I stumbled on a recipe for beet muffins, it reminded me of that conversation. Among many of the good things beets contain, one of them is Iron!

I don't know why I love beets so much. I love its colour, and I love it's sweet flavour in salads, or just roasted on its own. But I never had it in baking before!


These are
chocolate beet muffins, and to be honest, I don't really taste any beet flavour. To me, it just added a beautiful deep tinge of red to the muffin, and hopefully I am getting some iron in me too!

  1. Mmmmmmm! I love baking with beets! Apparently they make better red velvet cake, (rather than using 8 containers of red food colouring!). Those look delicious. My stomach is rumbling. Mmmm....
