Sea of Red
A few weeks ago, it was full on tomato season (and maybe it still is?) and Jen had Melinda and I over for the second year for a full weekend of tomato canning! This year, we had a little supervisor to make sure we were doing things right (Jen's sweet foster cat, Blossom).
We did so much with the tomatoes! We peeled, boiled, roasted, or chopped depending on what we were making it for. And then we sealed them in the jars so that we can enjoy them all year round.
It is was a lot of work, but it is always worth it in the end.
Jen kindly tallied up the totals for us! We made all of this with 3 bushels of tomatoes over two very long days.
1.75L of basil ketchup
5L regular ketchup
15L tomato sauce
8L crushed tomatoes
4L charred tomato sauce
2L charred salsa
7.75L zesty salsa
I was quite impressed with our results.

ReplyDeleteSo awesome! We had an influx of cucumbers this year and made a bunch of relish, now we don't know what to do with it... We don't really eat relish. Should have gotten tomatoes!

Wow! That's quite a haul! I have been making tomato soup with heirlooms and I will be so sad when tomato season is over. Canning is a great way to make it last! I'll have to start.
