I was hanging out with Jen and Rosalyn a little while ago, and for some reason, we were talking about how we all needed more Iron in our diet. When I stumbled on a recipe for beet muffins, it reminded me of that conversation. Among many of the good things beets contain, one of them is Iron!
I don't know why I love beets so much. I love its colour, and I love it's sweet flavour in salads, or just roasted on its own. But I never had it in baking before!
These are chocolate beet muffins, and to be honest, I don't really taste any beet flavour. To me, it just added a beautiful deep tinge of red to the muffin, and hopefully I am getting some iron in me too!


I had a slight headache last night, so I didn't feel like doing the work I was supposed to do.
I made carrot muffins instead!
Melinda posted about this recipe, and as I read it, I realized that I had everything in the house to make this, except walnuts and yogurt! I happily ran to my corner store to get these two ingredients.
I have never made muffins before. Can you believe it? In Melinda's photo of her muffin, she had a little puff of white cream on top of hers, and it reminded me that I wanted to learn how to make cream cheese frosting, which, I also had all the ingredients for!
Baking wouldn't be right if we didn't share it! I left two muffins for my neighbour upstairs by his door, along with his mail that came in today. If you came by, I would give one to you for your breakfast tomorrow too!
And now, my headache is gone. I definitely think it was the muffins that made it go away.

This isn’t New York City, but it should be just as famous.
If you live in Toronto, and you drive out east, there is no doubt you have seen the Big Apple sitting on the side of the freeway. It is so big, so red, and so hard to miss! I have always wondered what was there, and this trip was the perfect opportunity to finally see what this huge apple was all about!
I giggled when we walked in the store, because, they chose red for every piece of furniture they could! I am glad they left the walls white. Red walls would have been excessive. The Big Apple is a place of everything apples! Apple pie, caramel apples, apple chips……we bought a slice of apple pie, and a bag of caramel apple chips. The pie was too sweet, but the chips were juuuust right.
There is a staircase inside the gigantic apple, and it lands at the top. Oh yes, we climbed it.

We are going to May and Gabe's place for dinner, and I am going to attempt another pie for dessert. Gabe told me yesterday that there is going to be some guest participation in preparing their dinner. I am very curious as to what that means!
I am attempting pear and cranberry pie, the first pie my brother and Catie brought for us from Wanda's Pie in the Sky.I ate it, and said "I want to make it!"

(the pears are sitting on a baby quilt I am making for our friend. I can't decide whether I want to machine quilt it, or hand quilt it...I am leaning towards hand quilting. My sewing machine is getting old.)
